Ingredients:

  • Pasta: 250g (about 2 cups) of your favorite pasta (penne works best) 
  • Olive Oil: 2 tablespoons 
  • Garlic: 2 cloves, minced 
  • Mixed Veggies: 1 cup (bell peppers, zucchini, cherry tomatoes, sliced mushrooms, diced roasted capsicum) 
  • Spinach: 1 cup, cooked in house-made Napoli sauce 
  • Cheese: 1/4 cup, grated (for topping) 
  • Cream: 1/2 cup 
  • Salt and Pepper: To taste 
  • Dried Herbs: 1 teaspoon (optional, for extra flavor)
